Bhindi Fry (Okra Stir-Fry)

Ingredients

  • 1 pound Okra, sliced
  • 1 medium Onion, thinly sliced
  • 1 teaspoon Ginger, minced
  • 2 cloves Garlic, minced
  • 1/2 teaspoon Turmeric powder
  • 1/4 teaspoon Red chili powder
  • 1/2 teaspoon Cumin powder
  • 1/2 teaspoon Coriander powder
  • 1/2 teaspoon Amchur (dry mango powder)
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Salt

Instructions

  1. 1Place a 12-inch skillet over medium-high heat and add the 2 tablespoons of vegetable oil. Heat until the oil shimmers, about 1 minute.
  2. 2Add the 1 medium onion, thinly sliced, 1 teaspoon minced ginger, and 2 cloves minced garlic to the hot oil. Cook, stirring frequently, until the onions are golden brown and fragrant, about 5-7 minutes.
  3. 3Add the 1 pound of okra, sliced, 1/2 teaspoon turmeric powder, 1/4 teaspoon red chili powder, 1/2 teaspoon cumin powder, and 1/2 teaspoon coriander powder to the skillet. Stir everything together well to coat the okra.
  4. 4Cook the okra mixture over medium heat, stirring occasionally, until the okra is tender and slightly crispy. This should take about 15-20 minutes. You will notice the okra has lost its slimy texture and is starting to brown in spots.
  5. 5Stir in the 1/2 teaspoon amchur (dry mango powder) and 1 teaspoon salt. Continue to cook for 1 more minute, mixing well, until the spices are fragrant.
  6. 6Serve the Bhindi Fry hot.
