Bhatmas Sadeko (Soy-Free Roasted Soybeans)

A crunchy and savory Nepalese snack made from roasted soybeans, traditionally prepared without any added soy ingredients. This version emphasizes its natural soy-free status.

Ingredients

  • 1 cup Dried Soybeans
  • 1/4 cup Red Onion
  • 1 Green Chilies
  • 1 tsp Ginger
  • 1 tbsp Lemon Juice
  • 1/2 tsp Salt
  • 1/4 tsp Turmeric Powder
  • 1 tsp Vegetable Oil

Instructions

  1. 1Rinse the 1 cup of dried soybeans under cold running water in a colander. Transfer the rinsed 1 cup of dried soybeans to a large bowl and cover them completely with cold water. Let the soybeans soak for a minimum of 4 hours, or preferably overnight, to rehydrate.
  2. 2Drain the soaked 1 cup of soybeans thoroughly through a colander. Spread the drained soybeans in a single layer on a clean kitchen towel or several layers of paper towels and gently pat them dry to remove excess moisture.
  3. 3Place a 10-inch skillet or a medium-sized heavy-bottomed pan over medium heat (approximately 300-350°F / 150-175°C). Add the 1 tsp of vegetable oil to the pan and let it heat for 1-2 minutes until it shimmers slightly.
  4. 4Add the dried 1 cup of soybeans to the hot oil in the skillet. Roast the soybeans over medium heat, stirring frequently with a wooden spoon or spatula, for 15-20 minutes. Continue roasting until the soybeans turn golden brown, become visibly crunchy, and produce a nutty aroma.
  5. 5Remove the skillet from the heat and transfer the roasted 1 cup of soybeans to a clean, dry bowl. Allow the soybeans to cool for 5-10 minutes; this helps them become even crispier.
  6. 6While the soybeans cool, finely chop the 1/4 cup of red onion, mince the 1 green chili, and mince the 1 tsp of ginger. Add the cooled 1 cup of roasted soybeans to a mixing bowl, then add the finely chopped 1/4 cup of red onion, minced 1 green chili, minced 1 tsp of ginger, 1 tbsp of lemon juice, 1/2 tsp of salt, and 1/4 tsp of turmeric powder.
  7. 7Stir all the ingredients together thoroughly with a spoon until the soybeans are evenly coated with the spices and aromatics. Serve the Bhatmas Sadeko immediately as a crunchy snack.
