Bezzaz: Moroccan Fava Bean Soup

Ingredients

  • 1 cup Dried fava beans
  • 1 medium Onion
  • 3 cloves Garlic
  • 2 tbsp Olive oil
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1/2 tsp Ginger
  • 1/4 tsp Turmeric
  • 6 cups Vegetable broth
  • 2 tbsp Lemon juice
  • 2 tbsp Fresh cilantro

Instructions

  1. 1Soak the dried fava beans in water overnight.
  2. 2Drain the fava beans and rinse them well.
  3. 3In a large pot, heat olive oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  4. 4Add cumin, paprika, ginger, and turmeric to the pot and cook for 1 minute more.
  5. 5Add the fava beans and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 1-1.5 hours, or until the fava beans are tender.
  6. 6Use an immersion blender to partially blend the soup, leaving some chunks of fava beans for texture.
  7. 7Stir in lemon juice and fresh cilantro before serving.
