Ingredients

  • 2 lbs Beef Chuck
  • 1 cup Sunflower Seed Butter
  • 2 tbsp Annatto Seeds
  • 8 cups Water
  • 1 large Onion
  • 4 cloves Garlic
  • 2 medium Eggplant
  • 1 cup String Beans
  • 1 bunch Bok Choy
  • 2 tbsp Rice Flour
  • 2 tbsp Fish Sauce

Instructions

  1. 1Cut the beef chuck into 2-inch cubes.
  2. 2In a large pot or Dutch oven, brown the beef cubes on all sides.
  3. 3Remove the beef and set aside. In the same pot, sauté the onion and garlic until softened.
  4. 4Add the water and annatto seeds (wrapped in cheesecloth to extract color). Bring to a boil, then reduce heat and simmer for 1.5 hours, or until the beef is tender.
  5. 5Remove the annatto seed cheesecloth.
  6. 6In a separate bowl, whisk together the sunflower seed butter and rice flour with some of the broth to create a smooth paste.
  7. 7Pour the sunflower seed butter mixture into the pot with the beef. Stir well to combine.
  8. 8Add the eggplant and string beans. Cook for another 10 minutes.
  9. 9Add the bok choy and cook until wilted.
  10. 10Season with fish sauce to taste. Serve hot with rice.
