Ingredients

  • 2 lbs Beef chuck
  • 2 medium Potatoes
  • 2 medium Carrots
  • 1 medium Red bell pepper
  • 1 cup Green peas
  • 1 cup Tomato sauce
  • 2 tbsp Tomato paste
  • 2 cups Beef broth
  • 1 medium Onion
  • 3 cloves Garlic
  • 1/2 cup Dairy-free cheddar cheese
  • 2 tbsp Vegetable oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1Cut the 2 lbs of beef chuck into 1-inch cubes. Sprinkle the 1/2 tsp of salt and 1/4 tsp of black pepper evenly over the beef cubes.
  2. 2Heat the 2 tbsp of vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat, which is about 375°F (190°C).
  3. 3Carefully add the seasoned beef cubes to the hot pot in a single layer, working in batches if necessary to avoid overcrowding. Brown the beef on all sides for about 5-7 minutes per batch, until a nice brown crust forms. Remove the browned beef from the pot and set it aside on a plate.
  4. 4Add the 1 medium onion, chopped, and the 3 cloves of garlic, minced, to the same pot. Sauté for 3-4 minutes over medium heat, which is about 300°F (150°C), until the onion is softened and the garlic is fragrant.
  5. 5Pour in the 1 cup of tomato sauce, 2 tbsp of tomato paste, and 2 cups of beef broth. Stir everything together and bring the liquid to a boil.
  6. 6Return the browned beef to the pot. Add the 2 medium potatoes, peeled and cut into 1-inch cubes, the 2 medium carrots, peeled and cut into 1-inch thick rounds, and the 1 medium red bell pepper, seeded and cut into 1-inch pieces. Stir to combine.
  7. 7Reduce the heat to low, cover the pot, and let the stew simmer gently for 1 hour and 30 minutes, or until the beef is very tender when pierced with a fork. The liquid should be bubbling very gently, about 200°F (93°C).
  8. 8Stir in the 1 cup of green peas and the 1/2 cup of dairy-free cheddar cheese. Continue to cook, stirring occasionally, for another 5 minutes, or until the peas are heated through and the dairy-free cheese is melted and incorporated into the sauce.
  9. 9Serve the Beef Caldereta hot.
