Ingredients

  • 1.5 lb Beef Chuck (Cubed)
  • 2 tbsp Vegetable Oil
  • 1 medium Onion (Diced)
  • 4 cloves Garlic (Minced)
  • 1 cup Tomato Sauce
  • 2 cups Beef Broth
  • 2 medium Potatoes (Cubed)
  • 2 medium Carrots (Sliced)
  • 1 medium Bell Peppers (Sliced)
  • 1/2 cup Green Olives (Sliced)
  • 2 tbsp Liver Spread (Pate)
  • 2 tbsp Soy Sauce (Wheat-Free Tamari)
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. 1Heat vegetable oil in a large pot or Dutch oven over medium-high heat.
  2. 2Brown beef chuck on all sides. Remove from pot and set aside.
  3. 3Add diced onion and minced garlic to the pot and sauté until softened.
  4. 4Stir in tomato sauce and beef broth. Bring to a boil.
  5. 5Return beef to the pot. Add potatoes and carrots. Reduce heat to low, cover, and simmer for 1-1.5 hours, or until beef and vegetables are tender.
  6. 6Add bell peppers and green olives. Cook for another 15 minutes.
  7. 7Stir in liver spread and gluten-free soy sauce. Season with salt and pepper to taste.
  8. 8Serve hot.
