Ingredients
- 1 cup Mixed dried fruit
- 1 cup Black tea, strong
- 2 cups All-purpose flour
- 1 teaspoon Baking powder
- 1 teaspoon Mixed spice
- 1 egg Egg
- 1/2 cup Brown sugar
- 1/4 cup Milk
- 1 tablespoon Butter, for greasing
Instructions
- 1In a medium bowl, combine the 1 cup of Mixed dried fruit with the 1 cup of strong Black tea. Cover the bowl and let the fruit soak in the tea overnight.
- 2The next day, preheat your oven to 350°F (175°C). Use the 1 tablespoon of Butter to thoroughly grease the inside of a loaf pan.
- 3In a large mixing bowl, whisk together the 2 cups of All-purpose flour, 1 teaspoon of Baking powder, and 1 teaspoon of Mixed spice until well combined.
- 4In a separate medium bowl, beat the 1 egg with the 1/2 cup of Brown sugar until the mixture is light and creamy.
- 5Add all of the soaked fruit and its tea from step 1 into the large bowl with the flour mixture. Stir gently to combine. Then, add the egg and brown sugar mixture from step 4, along with the 1/4 cup of Milk, to the flour and fruit mixture. Mix everything until it is just combined and no dry streaks of flour remain; be careful not to overmix.
- 6Pour the batter into the prepared loaf pan. Bake for 50 to 60 minutes, or until a wooden skewer or toothpick inserted into the center of the loaf comes out clean, without any wet batter attached.
- 7Allow the Barmbrack to cool in the loaf pan for 10 minutes before carefully transferring it to a wire rack to cool completely; this prevents the loaf from breaking apart. Once completely cool, slice the Barmbrack and serve it with a warm cup of tea.
