Ingredients

  • 1 cup Rice Flour
  • 1 cup Coconut Milk
  • 0.5 tsp Turmeric Powder
  • 0.5 cup Water
  • 0.5 tsp Salt
  • 1 cup Mushrooms
  • 1 cup Bean Sprouts
  • 0.5 Onion
  • 2 tbsp Vegetable Oil
  • 0.5 cup Nuoc Cham (Vegan)

Instructions

  1. 1In a bowl, whisk together rice flour, coconut milk, turmeric powder, water, and salt until smooth.
  2. 2Heat a thin layer of vegetable oil in a non-stick skillet over medium heat.
  3. 3Pour a thin layer of batter into the skillet, swirling to coat the bottom evenly.
  4. 4Add mushrooms, bean sprouts, and sliced onion to one half of the crepe.
  5. 5Cook until the crepe is golden brown and crispy around the edges, about 3-5 minutes.
  6. 6Fold the crepe in half and slide it onto a plate.
  7. 7Serve immediately with vegan Nuoc Cham dipping sauce.
