Ingredients

  • 2 sheets Rice paper wrappers
  • 1 large Eggs
  • 2 oz Ground pork
  • 1 tbsp Dried shrimp
  • 2 tbsp Scallions
  • 1 tsp Chili sauce (Sriracha)
  • 1 tsp Hoisin sauce
  • 1 tsp Vegetable oil

Instructions

  1. 1In a small bowl, whisk the 1 large egg until it is well combined.
  2. 2In separate small bowls, prepare the 2 oz ground pork, 1 tbsp dried shrimp, 2 tbsp scallions, 1 tsp chili sauce, and 1 tsp hoisin sauce.
  3. 3Heat a non-stick skillet or griddle over medium heat, about 350°F (175°C). Lightly brush the hot skillet with the 1 tsp vegetable oil.
  4. 4Place 1 rice paper wrapper on the hot skillet. Immediately pour the whisked 1 large egg over the rice paper and spread it evenly with a spoon to cover the surface.
  5. 5Sprinkle the 2 oz ground pork and 1 tbsp dried shrimp evenly over the egg.
  6. 6Drizzle the 1 tsp chili sauce and 1 tsp hoisin sauce over the pork and shrimp. Sprinkle the 2 tbsp scallions on top.
  7. 7Cook for 2 to 3 minutes, or until the edges of the rice paper are crispy and the egg is fully cooked. The egg should be firm to the touch. Gently loosen the edges of the rice paper with a spatula.
  8. 8Carefully fold the rice paper in half, if desired. Serve immediately.
