Bandeja Paisa (Gluten-Free Platter)

Ingredients

  • 2 cups Red beans
  • 4 cups Cooked white rice
  • 8 oz Gluten-free chorizo
  • 8 oz Ground beef
  • 4 large Fried egg
  • 1 large Avocado
  • 2 large Sweet plantains (maduros)
  • 4 oz Chicharrón (pork belly)
  • 2 tablespoons Olive oil
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 tablespoons Tomato paste
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper

Instructions

  1. 1Combine the 2 cups of red beans with 6 cups of water in a large heavy-bottomed pot. Bring the water to a boil over high heat, then reduce the heat to low (approximately 200°F / 93°C), cover the pot, and simmer for 45-60 minutes, or until the beans are tender when tasted. During the last 10 minutes of simmering, stir in the 1 teaspoon of salt and 0.5 teaspoon of pepper.
  2. 2Slice the 2 large sweet plantains (maduros) into 1/2-inch thick rounds. Heat a 12-inch skillet over medium-high heat (400°F / 200°C). Add the sliced plantains and fry for 3-4 minutes per side, until they are golden brown and caramelized. Remove the fried plantains from the skillet and set them aside.
  3. 3In the same 12-inch skillet, add the 8 oz of gluten-free chorizo. Cook over medium heat (350°F / 175°C) for 8-10 minutes, turning the chorizo occasionally, until it is browned on all sides and cooked through. Remove the chorizo from the skillet and set it aside.
  4. 4Dice the 1 medium onion into 1/4-inch pieces and mince the 2 cloves of garlic. Add the 2 tablespoons of olive oil to the 12-inch skillet over medium-high heat (400°F / 200°C). Add the 8 oz of ground beef, the diced onion, and the minced garlic. Cook for 8-10 minutes, breaking up the beef with a spoon, until the beef is browned and no pink remains. Stir in the 2 tablespoons of tomato paste, 1 teaspoon of salt, and 0.5 teaspoon of pepper, and cook for an additional 1 minute, stirring constantly.
  5. 5Heat a separate non-stick skillet over medium heat (350°F / 175°C). Carefully crack the 4 large eggs into the skillet and fry for 3-5 minutes, or until the egg whites are fully set and the yolks are cooked to your desired firmness. Remove the fried eggs from the skillet.
  6. 6Slice the 1 large avocado. On a large platter, arrange portions of the 4 cups of cooked white rice, the cooked red beans, the ground beef mixture, the gluten-free chorizo, the fried sweet plantains, the sliced avocado, and the 4 oz of chicharrón. Place one of the 4 large fried eggs on top of each serving. Serve the Bandeja Paisa immediately.
