- 3Place the 4 oz of dairy-free chorizo in the same skillet used for the plantains, over medium heat (350°F / 175°C). Cook for 5-7 minutes, turning occasionally, until it is browned and heated through. Remove from the skillet and set aside.
- 4In the same skillet, add the 4 oz of ground beef. Cook over medium-high heat (375°F / 190°C) for 5-7 minutes, breaking it up with a spoon, until it is browned and no pink remains. Drain off any excess fat and set aside.
- 5Place the 2 oz of chicharron (pork belly) in the skillet over medium heat (350°F / 175°C). Cook for 3-5 minutes, turning occasionally, until it is crispy and heated through. Remove from the skillet and set aside.
- 6Heat the skillet again over medium heat (350°F / 175°C). Crack the 1 large egg into the skillet and fry it to your desired doneness, about 2-4 minutes for a runny yolk or longer for a firm yolk. Carefully remove the egg from the skillet.
- 7To assemble the Bandeja Paisa, arrange the cooked 1 cup of red beans, 1 cup of white rice, fried plantain slices, cooked dairy-free chorizo, and cooked ground beef on a large plate. Add the 1/2 medium avocado, sliced, and the fried egg on top. Place the small arepa on the side.
- 8Serve the Bandeja Paisa immediately.
