Ingredients

  • 1 cup Red beans
  • 1 cup White rice
  • 1 large Plantain
  • 4 oz Dairy-free chorizo
  • 1/2 medium Avocado
  • 1 large Egg
  • 2 tbsp Vegetable oil
  • 4 oz Ground beef
  • 2 oz Chicharron (pork belly)
  • 1 small Arepa

Instructions

  1. 1If your 1 cup of red beans and 1 cup of white rice are not already cooked, cook them now in separate pots according to your preferred method. Ensure they are tender.
  2. 2Peel the 1 large plantain and slice it into 1/2-inch thick rounds. Heat 2 tablespoons of vegetable oil in a 10-inch skillet over medium-high heat (375°F / 190°C). Fry the plantain slices for 2-3 minutes per side, until they are golden brown and slightly softened. Remove from the skillet and set aside on a plate lined with paper towels.
  3. 3Place the 4 oz of dairy-free chorizo in the same skillet used for the plantains, over medium heat (350°F / 175°C). Cook for 5-7 minutes, turning occasionally, until it is browned and heated through. Remove from the skillet and set aside.
  4. 4In the same skillet, add the 4 oz of ground beef. Cook over medium-high heat (375°F / 190°C) for 5-7 minutes, breaking it up with a spoon, until it is browned and no pink remains. Drain off any excess fat and set aside.
  5. 5Place the 2 oz of chicharron (pork belly) in the skillet over medium heat (350°F / 175°C). Cook for 3-5 minutes, turning occasionally, until it is crispy and heated through. Remove from the skillet and set aside.
  6. 6Heat the skillet again over medium heat (350°F / 175°C). Crack the 1 large egg into the skillet and fry it to your desired doneness, about 2-4 minutes for a runny yolk or longer for a firm yolk. Carefully remove the egg from the skillet.
  7. 7To assemble the Bandeja Paisa, arrange the cooked 1 cup of red beans, 1 cup of white rice, fried plantain slices, cooked dairy-free chorizo, and cooked ground beef on a large plate. Add the 1/2 medium avocado, sliced, and the fried egg on top. Place the small arepa on the side.
  8. 8Serve the Bandeja Paisa immediately.
