Banana Cue (Dairy-Free)

Caramelized saba bananas, deep-fried and coated in dairy-free caramel. A simple yet satisfying Filipino street food snack.

Ingredients

  • 8 pieces Saba bananas
  • 1/2 cup Brown sugar
  • 1 cup Vegetable oil

Instructions

  1. 1Peel the 8 Saba bananas. Cut each banana in half lengthwise.
  2. 2Pour the 1 cup of Vegetable oil into a frying pan and heat over medium heat, about 350°F (175°C).
  3. 3Add the 1/2 cup of Brown sugar to the hot oil. Stir constantly with a heatproof spatula until the sugar melts and turns a deep amber color, about 3-5 minutes. Be careful not to burn it.
  4. 4Carefully place the banana halves into the caramel. Gently turn them to coat all sides in the melted sugar.
  5. 5Fry the bananas in the caramel for 5-7 minutes, turning occasionally, until they are golden brown and the caramel is bubbling and slightly thickened.
  6. 6Remove the caramelized bananas from the pan using tongs or a slotted spoon. Place them on skewers, if desired. Serve warm.
