Banana Cue (Caramelized Fried Bananas)

A simple Filipino street food snack of saba bananas fried and coated in caramelized sugar.

Ingredients

  • 4 whole Saba Bananas (or Plantains), ripe
  • 1/2 cup Brown Sugar
  • 1/2 cup Vegetable Oil

Instructions

  1. 1Peel the 4 whole Saba Bananas. Cut each banana in half crosswise, so you have 8 pieces.
  2. 2Pour the 1/2 cup of Vegetable Oil into a 10-inch frying pan. Heat the oil over medium heat, about 300°F (150°C), until it shimmers.
  3. 3Carefully place the banana pieces into the hot oil. Fry for about 3 to 5 minutes, turning them occasionally with tongs, until they are golden brown on all sides.
  4. 4Sprinkle the 1/2 cup of Brown Sugar evenly over the bananas in the pan. Continue to fry, turning the bananas gently every minute or so, for another 3 to 5 minutes.
  5. 5Watch as the brown sugar melts and begins to bubble and caramelize. Keep turning the bananas until they are coated in a dark, amber-colored caramel. Be careful not to burn the sugar.
  6. 6Using tongs, carefully remove the caramelized bananas from the pan. Place them on a heatproof plate or a wire rack to cool slightly for 1 to 2 minutes. You can thread them onto skewers if desired.
  7. 7Serve the Banana Cue warm.
