Banana Cue (Caramelized Banana Skewers)

Deep-fried saba bananas coated in caramelized brown sugar. A simple and popular Filipino street food snack that's naturally egg-free.

Ingredients

  • 8 pieces Saba bananas (or plantains)
  • 1 cup Brown sugar
  • 1 cup Vegetable oil
  • 8 pieces Bamboo skewers

Instructions

  1. 1Peel the 8 Saba bananas and cut each one in half crosswise, creating 16 pieces. Thread each of the 16 banana pieces onto one of the 8 bamboo skewers.
  2. 2Pour the 1 cup of vegetable oil into a large, heavy-bottomed skillet. Heat the oil over medium heat until it reaches 350°F (175°C).
  3. 3Add the 1 cup of brown sugar to the skillet with the hot oil. Stir the sugar occasionally as it melts and begins to caramelize, which should take about 3-5 minutes. The sugar is ready when it turns a deep amber color.
  4. 4Carefully place the banana skewers into the bubbling caramelized sugar. Cook for 2-3 minutes per side, turning them frequently with tongs, until the bananas are golden brown and coated on all sides. The total cooking time will be about 6-9 minutes.
  5. 5Using tongs, carefully remove the caramelized banana skewers from the skillet. Place them on a plate lined with paper towels to drain any excess oil for about 1-2 minutes.
  6. 6Serve the Banana Cue warm.
