Ingredients

  • 4 medium Saba bananas (or plantains)
  • 1/2 cup Brown sugar
  • 1/4 cup Vegetable oil
  • 4 Bamboo skewers

Instructions

  1. 1Peel the 4 medium Saba bananas and cut each one in half crosswise, creating 8 pieces.
  2. 2Thread each of the 8 banana pieces onto one of the 4 bamboo skewers, so each skewer has two banana pieces on it.
  3. 3Place a large skillet over medium heat. Add the 1/4 cup of vegetable oil to the skillet. Heat the oil until it shimmers, which should take about 1 to 2 minutes.
  4. 4Add the 1/2 cup of brown sugar to the hot oil in the skillet. Stir it gently as it melts and begins to bubble and turn a deep amber color, about 2 to 3 minutes. Be careful not to let it burn.
  5. 5Carefully place the 4 skewered bananas into the caramel in the skillet. Cook for 5 to 7 minutes, turning the skewers occasionally with tongs. The bananas should become coated in the bubbling caramel and start to soften slightly. You'll see the caramel thicken around them.
  6. 6Using tongs, carefully remove the skewered bananas from the skillet. Place them on a heatproof surface, like a plate or a cooling rack, to cool slightly for about 5 minutes. This allows the caramel to set a little, making them easier to handle and eat.
