Ingredients

  • 1 cup Rolled Oats
  • 1 cup Dairy-Free Milk
  • 1 medium Mashed Banana
  • 2 tsp Baking Powder
  • 1 tsp Vanilla Extract
  • 2 tbsp Maple Syrup
  • 0.5 cup Blueberries
  • 0.25 cup Apple Sauce

Instructions

  1. 1In a blender, combine the 1 cup Rolled Oats and the 1 cup Dairy-Free Milk. Blend until the mixture is completely smooth.
  2. 2Add the 1 medium Mashed Banana, 2 tsp Baking Powder, 1 tsp Vanilla Extract, and 2 tbsp Maple Syrup to the blender. Blend again until all the ingredients are well combined.
  3. 3Gently fold the 0.5 cup Blueberries and the 0.25 cup Apple Sauce into the batter using a spatula until they are evenly distributed. Do not overmix.
  4. 4Heat a non-stick skillet or griddle over medium heat, approximately 350°F (175°C).
  5. 5Pour 1/4 cup of batter onto the hot skillet for each pancake. Cook for 2 to 3 minutes on the first side, until small bubbles appear on the surface and the edges look set.
  6. 6Carefully flip each pancake and cook for another 2 to 3 minutes on the second side, until golden brown and cooked through.
  7. 7Serve the pancakes immediately with your favorite compliant toppings.
