Ingredients

  • 4 6oz each Salmon fillets
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 medium Zucchini
  • 2 medium Bell peppers
  • 1 medium Red onion
  • 1 cup Cherry tomatoes
  • 3 cloves Garlic

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2Line a baking sheet with parchment paper.
  3. 3In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  4. 4Place salmon fillets on the prepared baking sheet. Brush with the olive oil mixture.
  5. 5Chop zucchini, bell peppers, and red onion into bite-sized pieces.
  6. 6In a large bowl, toss chopped vegetables and cherry tomatoes with remaining olive oil mixture and minced garlic.
  7. 7Spread vegetables around the salmon fillets on the baking sheet.
  8. 8Bake for 20-25 minutes, or until salmon is cooked through and vegetables are tender.
