Ingredients

  • 4 cups Cooked Rice
  • 1 cup Pineapple
  • 1/2 cup Cashews
  • 1/4 cup Raisins
  • 2 tbsp Soy Sauce
  • 1 tsp Curry Powder
  • 1/2 cup Onion
  • 1/2 cup Carrot
  • 1/2 cup Peas
  • 1 tbsp Vegetable Oil

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2Place 1 tablespoon of vegetable oil in a 10-inch skillet and heat it over medium heat until it shimmers.
  3. 3Add the 1/2 cup of onion, 1/2 cup of carrot, and 1/2 cup of peas to the hot skillet. Stir them around for 3 to 4 minutes, until they look a little softer.
  4. 4Add the 4 cups of cooked rice, 1 cup of pineapple, 1/2 cup of cashews, 1/4 cup of raisins, 2 tablespoons of soy sauce, and 1 teaspoon of curry powder to the skillet. Stir everything together for 2 minutes until it is all mixed and coated.
  5. 5Carefully pour the rice mixture from the skillet into a baking dish.
  6. 6Place the baking dish in the preheated oven and bake for 15 to 20 minutes. You will know it is ready when the rice is heated through and the top looks slightly browned.
  7. 7Serve the baked pineapple fried rice hot.
