Ingredients

  • 1 lb Ground Lamb
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 1/4 cup Fresh Parsley
  • 2 tbsp Fresh Mint
  • 1 tsp Cumin
  • 1/2 tsp Coriander
  • 1/2 tsp Paprika
  • 1 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 medium Eggplant
  • 2 medium Bell Peppers
  • 1 medium Red Onion
  • 1 medium Zucchini
  • 3 tbsp Olive Oil
  • Lemon Wedges

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2In a large bowl, combine ground lamb, chopped onion, minced garlic, parsley, mint, cumin, coriander, paprika, salt, and black pepper. Mix well with your hands.
  3. 3Form the mixture into small oval-shaped kofta.
  4. 4In a large bowl, toss diced eggplant, bell peppers, red onion, and zucchini with olive oil, salt, and pepper.
  5. 5Spread the vegetables in a single layer on a baking sheet.
  6. 6Place the kofta among the vegetables on the baking sheet.
  7. 7Bake for 30-35 minutes, or until the kofta are cooked through and the vegetables are tender and slightly browned.
  8. 8Serve hot with lemon wedges.
