Baked Fish with Charmoula and Couscous

Mild white fish baked with a vibrant Charmoula marinade, served with fluffy couscous. A lighter, healthier Moroccan dinner option.

Ingredients

  • 1.5 lbs White fish fillets (cod, haddock)
  • 1/2 cup Fresh cilantro
  • 1/2 cup Fresh parsley
  • 4 cloves Garlic
  • 1/4 cup Lemon juice
  • 1/4 cup Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1/2 teaspoon Turmeric
  • 1 cup Couscous

Instructions

  1. 1Preheat an oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. 2In a food processor, combine the 1/2 cup fresh cilantro, 1/2 cup fresh parsley, 4 cloves garlic, 1/4 cup lemon juice, 1/4 cup olive oil, 1 teaspoon cumin, 1 teaspoon paprika, and 1/2 teaspoon turmeric. Blend these ingredients until they form a smooth paste.
  3. 3Place the 1.5 lbs white fish fillets onto the prepared baking sheet. Evenly spread the prepared Charmoula mixture over the top of each fish fillet.
  4. 4Bake the fish in the preheated oven for 15 to 20 minutes. The fish is cooked through when it flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  5. 5Serve the baked fish fillets on top of the 1 cup couscous.
