Ingredients

  • 8 slices Bacon
  • 2 medium Avocado

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2On a clean cutting board, cut each of the 8 slices of bacon in half crosswise, resulting in 16 shorter pieces of bacon.
  3. 3Carefully cut the 2 medium avocados in half lengthwise. Remove the pits and use a spoon to scoop all the avocado flesh out of the skins. On a clean cutting board, cut the avocado flesh into 16 bite-sized cubes, aiming for pieces roughly 1-inch (2.5 cm) in size, similar to the size of your bacon pieces.
  4. 4Take one of the 16 pieces of bacon and carefully wrap it around one of the 16 avocado cubes. Repeat this process until all the bacon and avocado are used, creating 16 bacon-wrapped avocado bites.
  5. 5Line a baking sheet with parchment paper. Arrange the 16 bacon-wrapped avocado bites on the lined baking sheet, ensuring there is a small space between each one so they cook evenly.
  6. 6Bake the bites in the preheated oven at 400°F (200°C) for 10 to 15 minutes. The bites are done when the 8 slices of bacon are crispy and golden brown, and the avocado feels firm when gently pressed.
  7. 7Carefully remove the baking sheet from the oven. Let the 16 Bacon & Avocado Bites cool on the baking sheet for 1 to 2 minutes before serving immediately, as they will be very hot.
