Ingredients

  • 1 lb Salt Cod (soaked and shredded)
  • 1 lb Potatoes (thinly sliced and fried)
  • 1 medium Onion (thinly sliced)
  • 6 Eggs
  • 0.25 cup Dairy-Free Milk (unsweetened)
  • 0.5 cup Black Olives (pitted)
  • 4 tablespoons Olive Oil
  • 0.25 cup Parsley (chopped)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Instructions

  1. 1Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  2. 2Add the shredded salt cod and cook for 5 minutes, stirring occasionally.
  3. 3In a separate bowl, whisk together the eggs, dairy-free milk, salt, and pepper.
