Ingredients

  • 8 Chicken Pieces (thighs or drumsticks)
  • 2 Onions
  • 4 cloves Garlic
  • 1 inch Ginger
  • 4 tbsp Tomato Paste
  • 2 tbsp Chili Paste (Sambal Oelek)
  • 1 cup Tomato Sauce
  • 1 tbsp Soy Sauce
  • 2 tbsp Sugar
  • 1 tsp Salt
  • 2 tbsp Vegetable Oil
  • 1 tbsp Cornstarch

Instructions

  1. 1Marinate the chicken pieces with a mixture of salt and turmeric powder. Let it rest for 15 minutes.
  2. 2Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. 3Fry the chicken pieces until golden brown. Remove and set aside.
  4. 4Blend onions, garlic, and ginger into a fine paste.
  5. 5In the same skillet, sauté the onion paste until fragrant.
  6. 6Add tomato paste, chili paste, and tomato sauce. Cook for 5 minutes.
  7. 7Add soy sauce, sugar, and salt. Stir well to combine.
  8. 8Return the fried chicken to the skillet. Coat the chicken with the sauce. Add cornstarch if the sauce needs more thickening.
  9. 9Simmer for 20 minutes, or until the chicken is cooked through and the sauce has thickened.
