Asida (Pumpkin Pudding)

Ingredients

  • 2 cups Pumpkin Puree
  • 1/2 cup All-Purpose Flour
  • 2 cups Water
  • 1/2 cup Sugar
  • 1/2 tsp Cardamom Powder
  • 1/4 tsp Cinnamon Powder
  • 2 tbsp Ghee (Clarified Butter)

Instructions

  1. 1In a large heavy-bottomed pot, combine the 2 cups of pumpkin puree, the 1/2 cup of all-purpose flour, the 2 cups of water, and the 1/2 cup of sugar. Stir everything together with a whisk until it is completely smooth and there are no lumps of flour.
  2. 2Place the pot over medium heat, which is about 350°F (175°C). Cook the mixture, stirring constantly with a whisk or wooden spoon, for 10 to 15 minutes. Keep stirring to prevent sticking. The mixture will start to thicken and become smooth and pudding-like.
  3. 3Add the 1/4 teaspoon of cinnamon powder and the 1/2 teaspoon of cardamom powder to the pot. Continue to cook and stir constantly for another 2 to 3 minutes. The pudding will become noticeably thicker and should hold its shape slightly on the spoon.
  4. 4Remove the pot from the heat. Stir in the 2 tablespoons of ghee (clarified butter) until it is fully melted and combined into the pudding.
  5. 5Serve the asida warm in bowls.
