Asida (Gluten-Free Cornmeal Version)

A thick, pudding-like dish typically made with wheat flour, this gluten-free version uses cornmeal cooked with butter and honey, often served warm for breakfast.

Ingredients

  • 1 cup Fine Cornmeal
  • 3 cups Water
  • 0.5 cup Butter
  • 0.25 cup Honey
  • 0.25 tsp Cardamom Powder
  • 0.125 tsp Saffron Threads (optional)
  • 0.125 tsp Salt

Instructions

  1. 1In a medium saucepan, combine the 3 cups of water and the 0.125 tsp of salt. Bring this mixture to a rolling boil over high heat, about 5-7 minutes.
  2. 2While whisking constantly, slowly pour in the 1 cup of fine cornmeal. Continue whisking for 1 minute to make sure there are no lumps. Reduce the heat to low, so the mixture is barely simmering.
  3. 3Cook the cornmeal mixture for 10 to 15 minutes, stirring constantly with a wooden spoon or heatproof spatula. The mixture will thicken to a smooth, porridge-like consistency. It should pull away from the sides of the pot when stirred.
  4. 4Add the 0.5 cup of butter, the 0.25 cup of honey, the 0.25 tsp of cardamom powder, and the 0.125 tsp of saffron threads (if using) to the pot. Stir well to incorporate.
  5. 5Continue to cook over low heat for another 5 minutes, stirring constantly. Stir until the butter is completely melted and all the ingredients are thoroughly combined. The mixture should be thick and glossy.
  6. 6Serve the Asida warm immediately. You can add an extra drizzle of honey or a small pat of butter on top if desired.
