Ingredients

  • 1 cup Arborio Rice
  • 4 cups Coconut Milk
  • 2 cups Water
  • 1/2 cup Granulated Sugar
  • 1 strip Lemon Peel
  • 1 each Cinnamon Stick
  • 1 tsp Ground Cinnamon

Instructions

  1. 1Rinse the arborio rice in a fine-mesh sieve until the water runs clear.
  2. 2In a medium saucepan, combine the rice, coconut milk, water, sugar, lemon peel, and cinnamon stick.
  3. 3Bring the mixture to a boil over medium heat, then reduce the heat to low, cover, and simmer for 35-40 minutes, or until the rice is tender and the liquid has been absorbed, stirring occasionally to prevent sticking.
  4. 4Remove from heat and discard the lemon peel and cinnamon stick.
  5. 5Transfer the rice pudding to a serving dish or individual bowls.
  6. 6Sprinkle with ground cinnamon before serving. Serve warm or chilled.
