Ingredients

  • 1 cup Arborio Rice
  • 4 cups Coconut Milk
  • 1 cup Water
  • 1 stick Cinnamon Stick
  • 1 strip Lemon Peel
  • 2 tablespoons Maple Syrup
  • 1/2 teaspoon Ground Cinnamon
  • 1/4 teaspoon Salt

Instructions

  1. 1Rinse the Arborio rice in a fine-mesh sieve until the water runs clear.
  2. 2In a medium saucepan, combine the rinsed rice, coconut milk, water, cinnamon stick, lemon peel, and salt.
  3. 3Bring the mixture to a boil over medium heat, then reduce the heat to low, cover, and simmer for 30-35 minutes, or until the rice is tender and the liquid has been absorbed. Stir occasionally to prevent sticking.
  4. 4Remove the cinnamon stick and lemon peel. Stir in the maple syrup.
  5. 5Divide the rice pudding among bowls and sprinkle with ground cinnamon. Serve warm or chilled.
