Ingredients

  • 1 cup Arborio Rice
  • 2 cups Diced Tomatoes
  • 1 small Onion
  • 2 cloves Garlic
  • 2 tablespoons Olive Oil
  • 3 cups Vegetable Broth
  • 1 leaf Bay Leaf
  • 0.75 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Instructions

  1. 1Finely chop the onion and mince the garlic.
  2. 2In a medium pot, sauté the onion and garlic in olive oil until softened.
  3. 3Add the Arborio rice and cook for 2-3 minutes, until lightly toasted.
  4. 4Add the diced tomatoes, vegetable broth, and bay leaf. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the rice is cooked through and the liquid is absorbed.
  5. 5Season with salt and pepper to taste. Remove the bay leaf before serving.
