Ingredients

  • 1 lb Shrimp
  • 1 lb Clams
  • 1 lb Mussels
  • 6 cups Cauliflower Rice
  • 1 Onion
  • 4 cloves Garlic
  • 2 tbsp Tomato Paste
  • 1/2 cup White Wine
  • 4 cups Fish Broth
  • 3 tbsp Olive Oil
  • 1 tsp Paprika
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 tbsp Fresh Cilantro

Instructions

  1. 1Heat olive oil in a large pot over medium heat. Add chopped onion and garlic and cook until softened, about 5 minutes.
  2. 2Add tomato paste and paprika, and cook for 1 minute more.
  3. 3Pour in the white wine and let it reduce slightly, about 2 minutes.
  4. 4Add fish broth and bring to a simmer.
  5. 5Add the shrimp, clams, and mussels. Cover and cook until the shellfish opens, about 5-8 minutes.
  6. 6Stir in the cauliflower rice and cook until heated through, about 3-5 minutes.
  7. 7Season with salt and pepper to taste.
  8. 8Garnish with fresh cilantro and serve immediately.
