Arroz de Marisco (Keto Version with Hearts of Palm)

A keto-friendly version of Arroz de Marisco (seafood rice), using hearts of palm to mimic the texture of rice. This dish is naturally dairy-free.

Ingredients

  • 1/2 lb Shrimp (peeled and deveined)
  • 1 lb Clams (scrubbed)
  • 1 lb Mussels (scrubbed and debearded)
  • 4 cups Hearts of palm (diced)
  • 3 tbsp Olive oil
  • 1 medium Onion (diced)
  • 4 cloves Garlic (minced)
  • 2 tbsp Tomato paste
  • 1/2 cup White wine (dry)
  • 2 cups Fish broth (dairy-free)
  • 1 tsp Smoked paprika
  • 1 leaf Bay leaf
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 2 tbsp Fresh cilantro (chopped)

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Add onion and cook until softened, about 5 minutes.
  3. 3Add garlic and cook for another minute until fragrant.
  4. 4Stir in tomato paste and smoked paprika. Cook for 1 minute.
  5. 5Pour in white wine and cook until reduced by half, about 3 minutes.
  6. 6Add fish broth, bay leaf, and hearts of palm. Bring to a simmer.
  7. 7Add clams and mussels. Cover and cook until they open, about 5-7 minutes. Discard any that do not open.
  8. 8Add shrimp and cook until pink and opaque, about 3 minutes.
  9. 9Season with salt and pepper to taste.
  10. 10Garnish with fresh cilantro before serving.
