Arroz com Pequi (Rice with Pequi)

Ingredients

  • 2 cups Rice
  • 4 cups Water
  • 1 cup Pequi (fresh or frozen)
  • 0.5 medium Onion (diced)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Instructions

  1. 1Rinse the rice under cold water.
  2. 2In a pot, heat olive oil over medium heat.
  3. 3Sauté onion and garlic until softened.
  4. 4Add the rice and pequi and cook for a minute, stirring constantly.
  5. 5Add water, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes, or until the rice is cooked through and the water is absorbed.
  6. 6Fluff with a fork before serving. Careful around the pequi pits!
