Ingredients

  • 2 cups Pre-cooked White Corn Flour (Masarepa)
  • 2 cups Water
  • 1 teaspoon Salt
  • 1/2 cup Vegetable Oil
  • 4 large Eggs
  • 1 medium Avocado
  • 1/2 cup Hogao (Colombian Tomato & Onion Sauce)

Instructions

  1. 1In a bowl, mix the pre-cooked corn flour with water and salt until a soft dough forms. Let it rest for 5 minutes.
  2. 2Divide the dough into 4 equal portions. Form each portion into a flat, round patty, about 1/2 inch thick.
  3. 3Heat a lightly oiled griddle or skillet over medium heat. Cook the arepas for about 7-10 minutes per side, or until golden brown and slightly crispy.
  4. 4Carefully make a slit in the side of each arepa, creating a pocket.
  5. 5In a separate skillet, heat vegetable oil over medium-high heat. Crack an egg into each arepa pocket.
  6. 6Fry the eggs inside the arepas until the egg whites are set and the yolks are cooked to your liking. This may take 3-5 minutes.
  7. 7Serve immediately with avocado slices and hogao.
