Arepas con Aguacate (Avocado Arepas)

Ingredients

  • 2 cups Masa Harina (pre-cooked corn flour)
  • 1.5 cups Water
  • 1 teaspoon Salt
  • 2 medium Avocados
  • 2 tablespoons Lime Juice
  • 1/4 cup Red Onion
  • 2 tablespoons Cilantro
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 2 tablespoons Vegetable Oil

Instructions

  1. 1In a bowl, mix masa harina, water, and salt until a soft dough forms. Let rest for 5 minutes.
  2. 2Divide the dough into 8 equal portions and shape into flattened discs (arepas).
  3. 3Heat vegetable oil in a skillet over medium heat. Cook arepas for 5-7 minutes per side, until golden brown and cooked through.
  4. 4While arepas are cooking, mash avocados in a bowl. Add lime juice, red onion, cilantro, salt, and pepper. Mix well.
  5. 5Once arepas are cooked, slice them open and fill with the avocado mixture. Serve immediately.
