  • 1 cup All-Purpose Flour
  • 2 tablespoons Sugar
  • 2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 1 tablespoon Flaxseed Meal
  • 3 tablespoons Water
  • 1 cup Milk (dairy or non-dairy)
  • 2 medium Apples
  • 2 tablespoons Oil for frying
  • 2 tablespoons Powdered Sugar (for dusting)

Instructions

  1. 1In a small bowl, mix flaxseed meal with water. Let it sit for 5 minutes to thicken (this is your egg replacement).
  2. 2In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. 3Add the flaxseed 'egg' and milk to the dry ingredients and whisk until just combined. Do not overmix.
  4. 4Peel, core, and dice the apples. Gently fold the diced apples into the batter.
  5. 5Heat oil in a large skillet over medium heat.
  6. 6Drop spoonfuls of batter into the hot oil, being careful not to overcrowd the pan.
  7. 7Cook for 2-3 minutes per side, or until golden brown and cooked through.
  8. 8Transfer to a paper towel-lined plate to drain excess oil.
  9. 9Dust with powdered sugar and serve immediately.
