Ingredients

  • 3 cups Rolled Oats
  • 2 medium Apple
  • 2 cups Almond Milk
  • 2 large Eggs
  • 1/4 cup Maple Syrup
  • 1 teaspoon Cinnamon
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt

Instructions

  1. 1Preheat your oven to 375°F (190°C). Prepare a muffin tin by greasing it or lining it with muffin liners.
  2. 2Peel, core, and dice the 2 medium apples into small pieces, about 1/4-inch in size.
  3. 3In a large bowl, combine the 3 cups Rolled Oats, the diced apples, 2 cups Almond Milk, 2 large Eggs, 1/4 cup Maple Syrup, 1 teaspoon Cinnamon, 1 teaspoon Baking Powder, and 1/4 teaspoon Salt.
  4. 4Stir all the ingredients together until they are well combined and there are no dry spots of oats.
  5. 5Carefully pour the mixture into the prepared muffin tin. Fill each muffin cup about three-quarters full.
  6. 6Bake for 20 to 25 minutes. The oatmeal cups are done when the tops are golden brown and the oatmeal feels set when gently touched.
  7. 7Allow the oatmeal cups to cool in the muffin tin for a few minutes before carefully removing them.
  8. 8Serve the oatmeal cups warm.
