Ingredients

  • 1 cup Rice flour
  • 1/2 cup All-purpose flour
  • 2 tbsp Sugar
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1 cup Water
  • 1/4 cup Coconut milk
  • 1 large Eggs
  • 1/2 cup Ground peanuts
  • 1/4 cup Sugar
  • 1/4 cup Creamed corn
  • 2 tbsp Butter

Instructions

  1. 1In a bowl, whisk together the rice flour, all-purpose flour, sugar, baking powder, and baking soda.
  2. 2Gradually add water and coconut milk, whisking until smooth. Add the egg and mix well.
  3. 3Heat a lightly greased non-stick pan or griddle over medium heat.
  4. 4Pour a ladleful of batter onto the pan and spread it out into a circle.
  5. 5Cook until bubbles start to form on the surface, then sprinkle with ground peanuts, sugar, and creamed corn.
  6. 6Fold the pancake in half and cook for another 1-2 minutes, until golden brown.
  7. 7Brush with butter and serve immediately.
