Ingredients

  • 1 cup All-Purpose Flour
  • 0.5 cup Rice Flour
  • 1 teaspoon Baking Powder
  • 0.25 cup Sugar
  • 0.25 teaspoon Salt
  • 1.25 cups Water
  • 2 tablespoons Vegetable Oil
  • 0.75 cup Roasted Peanuts
  • 0.5 cup Sugar (for filling)
  • 0.5 cup Creamed Corn

Instructions

  1. 1In a bowl, whisk together all-purpose flour, rice flour, baking powder, sugar, and salt.
  2. 2Gradually add water while whisking to form a smooth batter. Let the batter rest for 30 minutes.
  3. 3Heat a non-stick pan or griddle over medium heat. Brush with a little vegetable oil.
  4. 4Pour about 1/2 cup of batter onto the pan, spreading it evenly to form a circle.
  5. 5Cook for about 2-3 minutes until bubbles start to form on the surface.
  6. 6Sprinkle roasted peanuts and sugar over half of the pancake. Add creamed corn if desired.
  7. 7Fold the pancake in half and cook for another 1-2 minutes until golden brown and crispy around the edges.
  8. 8Remove from the pan and slice into wedges. Serve immediately.
