Ingredients

  • 1 lb Andouille sausage (sliced)
  • 2 medium Sweet potatoes (diced)
  • 1 Red onion (diced)
  • 1 Green bell pepper (diced)
  • 3 cloves Garlic (minced)
  • 2 tbsp Olive oil
  • 2 tsp Cajun seasoning
  • 1 tsp Smoked paprika
  • 1/4 cup Dairy-free milk
  • 1 tbsp Maple syrup
  • to taste Salt
  • to taste Black pepper
  • 1 tbsp Fresh thyme

Instructions

  1. 1Heat olive oil in a large skillet over medium heat. Add andouille sausage and cook until browned and crispy (about 5-7 minutes). Remove sausage from skillet and set aside.
  2. 2Add diced sweet potatoes, red onion, and green bell pepper to the skillet. Cook until sweet potatoes are tender (about 10-12 minutes).
  3. 3Add minced garlic, Cajun seasoning, and smoked paprika to the skillet. Cook for 1 minute more.
  4. 4Return sausage to the skillet. Stir in dairy-free milk and maple syrup. Simmer for 2-3 minutes.
  5. 5Season with salt and pepper to taste. Garnish with fresh thyme. Serve hot.
