  • 1 lb Andouille Sausage, sliced
  • 1 large Sweet Potato, baked and mashed
  • 1/4 cup Coconut Milk
  • 1 tsp Cajun Spice Blend
  • 1 tbsp Maple Syrup
  • 1 tsp Lime Juice
  • 1/4 tsp Salt
  • 1/8 tsp Black Pepper

Instructions

  1. 1Preheat your oven to 400°F (200°C). Arrange the 1 lb of sliced Andouille Sausage in a single layer on a large baking sheet.
  2. 2Bake the sausage for 15 to 20 minutes, or until the sausage is cooked through, slightly crispy, and reaches an internal temperature of 165°F (74°C).
  3. 3While the sausage bakes, prepare the dip. In a medium mixing bowl, combine the 1 large baked and mashed Sweet Potato, 1/4 cup of Coconut Milk, 1 tsp of Cajun Spice Blend, 1 tbsp of Maple Syrup, 1 tsp of Lime Juice, 1/4 tsp of Salt, and 1/8 tsp of Black Pepper.
