Anda Paratha (Egg-Stuffed Flatbread)

Ingredients

  • 2 cups Whole wheat flour
  • 1 cup Water
  • 1/2 tsp Salt
  • 4 tbsp Ghee (clarified butter)
  • 4 large Eggs
  • 1 small Green chilies
  • 1/2 tsp Red chili powder
  • 1/4 tsp Turmeric powder
  • 2 tbsp Cilantro
  • 1/4 cup Onion

Instructions

  1. 1Prepare the dough: Mix flour, water, and salt. Knead into a smooth, pliable dough. Rest for 15 minutes.
  2. 2Prepare the egg mixture: In a bowl, whisk eggs with green chilies, red chili powder, turmeric, cilantro, and onion. Add salt to taste.
  3. 3Divide the dough into 4 equal portions. Roll each portion into a small circle.
  4. 4Heat a flat griddle or skillet over medium heat.
  5. 5Place a rolled dough circle on the hot griddle. Cook for a minute, then flip.
  6. 6Spread a thin layer of ghee on the cooked side. Pour 1/4 of the egg mixture onto the paratha.
  7. 7Quickly fold the paratha over the egg mixture, sealing the edges.
  8. 8Cook on both sides until golden brown and crispy, applying more ghee as needed.
  9. 9Serve hot with yogurt or chutney.
