Aloo Ko Achar (Potato Salad)

Ingredients

  • 1 lb Potatoes
  • 2 tablespoons Mustard Oil
  • 1/2 teaspoon Fenugreek Seeds (Methi)
  • 1-2 Green Chilies
  • 1 teaspoon Ginger
  • 1/4 teaspoon Turmeric Powder
  • 1/4 teaspoon Red Chili Powder
  • 1/2 teaspoon Cumin Powder
  • 1/2 teaspoon Coriander Powder
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Fresh Cilantro
  • 1 teaspoon Salt

Instructions

  1. 1Place the 1 lb Potatoes in a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-high and cook for 15-20 minutes, or until the potatoes are tender when pierced with a fork but still hold their shape. Drain the potatoes and let them cool slightly for about 10 minutes.
  2. 2Once the potatoes are cool enough to handle, peel them. Cut the peeled potatoes into 1/2-inch cubes and place them in a large bowl.
  3. 3Heat the 2 tablespoons of Mustard Oil in a small pan over medium heat (350°F / 175°C).
  4. 4Add the 1/2 teaspoon of Fenugreek Seeds (Methi) to the hot oil and cook for about 30 seconds, until they begin to lightly brown and splutter. Be careful not to burn them, as this will make them bitter.
  5. 5Add the 1-2 Green Chilies and the 1 teaspoon of Ginger to the pan. Sauté for another 15-30 seconds until fragrant, stirring constantly.
  6. 6Add the 1/4 teaspoon of Turmeric Powder, 1/4 teaspoon of Red Chili Powder, 1/2 teaspoon of Cumin Powder, 1/2 teaspoon of Coriander Powder, and 1 teaspoon of Salt to the bowl with the diced potatoes. Toss to coat the potatoes evenly.
  7. 7Carefully pour the hot mustard oil mixture with the fenugreek seeds, chilies, and ginger over the seasoned potatoes in the bowl. Add the 2 tablespoons of Lemon Juice and the 2 tablespoons of Fresh Cilantro.
  8. 8Gently mix all the ingredients together until the potatoes are well combined with the oil, spices, and herbs. Taste a piece of potato and add a little more salt or lemon juice if needed.
  9. 9Cover the bowl and refrigerate for at least 30 minutes. This chilling time allows the flavors to meld together, making the potato salad more delicious.
