Aloo Gobi (Potato and Cauliflower Curry)

Ingredients

  • 1 medium head Cauliflower
  • 2 medium Potatoes
  • 1 medium Onion
  • 1 medium Tomato
  • 1 inch Ginger
  • 2 cloves Garlic
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Garam masala
  • 2 tablespoons Ghee
  • 1/2 teaspoon Salt

Instructions

  1. 1Cut the cauliflower into florets and dice the potatoes into 1-inch cubes.
  2. 2Heat ghee in a large skillet or wok over medium heat.
  3. 3Add chopped onions and cook until translucent.
  4. 4Add minced garlic and grated ginger and cook for another minute.
  5. 5Add diced tomatoes, turmeric powder, cumin powder, coriander powder, and garam masala. Cook for 2 minutes.
  6. 6Add the cauliflower and potatoes. Stir well to coat with the spices.
  7. 7Add a splash of water (about 1/4 cup) to prevent sticking. Cover and cook for 20-25 minutes, or until the potatoes and cauliflower are tender, stirring occasionally.
  8. 8Season with salt to taste. Serve hot with rice or gluten-free roti.
