Ingredients

  • 1 medium head Cauliflower
  • 2 medium Potatoes
  • 1 medium Onion
  • 1 medium Tomato
  • 1 tbsp Ginger-Garlic Paste
  • 1 tsp Turmeric Powder
  • 1 tsp Cumin Powder
  • 1 tsp Coriander Powder
  • 0.5 tsp Garam Masala
  • 0.5 tsp Amchur (Dry Mango Powder)
  • 0.25 tsp Chili Powder
  • 1 tsp Salt
  • 2 tbsp Vegetable Oil
  • 2 tbsp Cilantro

Instructions

  1. 1Cut cauliflower and potatoes into bite-sized pieces. Chop onion and tomato.
  2. 2Heat vegetable oil in a large pan or wok. Add chopped onion and sauté until golden brown. Add ginger-garlic paste and sauté for a minute.
  3. 3Add chopped tomatoes and cook until softened. Stir in turmeric powder, cumin powder, coriander powder, chili powder (if using), garam masala, amchur, and salt. Cook for another 2 minutes.
  4. 4Add cauliflower and potatoes. Mix well and cook covered over medium heat for 20-25 minutes, or until vegetables are tender, stirring occasionally.
  5. 5Garnish with cilantro. Serve Aloo Gobi hot.
