Ingredients

  • 2 cups All-purpose flour
  • 1 cup Cornstarch
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1 cup Unsalted butter
  • 3/4 cup Sugar
  • 3 large Egg yolks
  • 1 teaspoon Vanilla extract
  • 1 jar Dulce de leche
  • 1 cup Shredded coconut

Instructions

  1. 1Preheat oven to 350°F (175°C).
  2. 2In a bowl, whisk together flour, cornstarch, baking powder, and baking soda.
  3. 3In a separate bowl, cream together butter and sugar until light and fluffy.
  4. 4Beat in egg yolks one at a time, then stir in vanilla extract.
  5. 5Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.
  6. 6Roll out the dough to 1/4-inch thickness and cut out circles using a cookie cutter.
  7. 7Place the cookies on a baking sheet lined with parchment paper.
  8. 8Bake for 12-15 minutes, or until lightly golden.
  9. 9Let the cookies cool completely.
  10. 10Spread dulce de leche on one cookie and top with another cookie to form a sandwich.
  11. 11Roll the edges of the sandwich cookie in shredded coconut.
