Ingredients

  • 1 cup Black-Eyed Peas
  • 0.5 medium Red Bell Pepper
  • 0.25 small Scotch Bonnet Pepper
  • 0.5 medium Onion
  • 1 tsp Salt
  • 2 cups Vegetable Oil

Instructions

  1. 1Soak black-eyed peas in water for at least 4 hours, or overnight.
  2. 2Drain and rinse the peas.
  3. 3In a food processor, blend the peas with red bell pepper, scotch bonnet pepper (adjust to taste), onion, and salt until smooth.
  4. 4Heat vegetable oil in a deep frying pan over medium heat.
  5. 5Spoon small portions of the bean mixture into the hot oil.
  6. 6Fry for 3-4 minutes on each side until golden brown and crispy.
  7. 7Remove fritters and drain on paper towels. Serve hot.
