Ingredients

  • 1 pound Potatoes (Yukon Gold or similar)
  • 1 pound Chicken-style Seitan
  • 2 ears Corn on the Cob
  • 1/4 cup Guascas (dried)
  • 1 medium Onion
  • 2 cloves Garlic
  • 8 cups Vegetable Broth
  • 1/2 cup Dairy-Free Cream
  • 1/4 cup Cilantro
  • 1 medium Avocado
  • 2 tablespoons Capers
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Instructions

  1. 1In a large pot, combine potatoes, seitan, corn, guascas, onion, garlic, and vegetable broth.
  2. 2Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until the potatoes are very tender and starting to break down.
  3. 3Stir in dairy-free cream. Season with salt and pepper to taste.
  4. 4Serve hot, garnished with cilantro, avocado, and capers.
