Ingredients

  • 2 lbs Chicken breasts
  • 10 cups Water
  • 1 lb Yukon Gold potatoes
  • 1 lb Russet potatoes
  • 2 ears Corn on the cob
  • 2 tbsp Guascas (dried)
  • 2 cubes Chicken bouillon
  • 4 stalks Green onions
  • 1/2 cup Cilantro
  • 1 whole Avocado

Instructions

  1. 1In a large pot, combine chicken breasts, water, and chicken bouillon. Bring to a boil and then reduce heat and simmer for 30 minutes.
  2. 2Remove chicken breasts and shred with two forks. Set aside.
  3. 3Add potatoes to the pot and cook until tender, about 20 minutes.
  4. 4Add corn on the cob and guascas. Cook for another 10 minutes.
  5. 5Return shredded chicken to the pot. Stir in green onions and cilantro.
  6. 6Serve hot with slices of avocado on top.
