Ingredients

  • 1 lb Firm tofu
  • 1/2 cup Potato starch
  • 2 cups Vegetable oil
  • 2 cups Vegan dashi
  • 2 tbsp Soy sauce
  • 2 tbsp Mirin
  • 2 tbsp Grated daikon radish
  • 2 tbsp Green onions (chopped)
  • 1 tsp Grated ginger

Instructions

  1. 1Press tofu to remove excess water. Cut into 1-inch cubes.
  2. 2Coat tofu cubes with potato starch.
  3. 3Heat vegetable oil in a deep skillet or pot over medium-high heat.
  4. 4Fry tofu until golden brown and crispy, about 3-5 minutes per side.
  5. 5In a separate saucepan, heat vegan dashi, soy sauce, and mirin until simmering.
  6. 6Place fried tofu in bowls and pour the dashi broth over them.
  7. 7Garnish with grated daikon radish, green onions, and grated ginger.
