Adobong Sitaw (String Beans Adobo)

Ingredients

  • 1 lb String beans (sitaw)
  • 1/4 cup Soy sauce
  • 1/4 cup Vinegar
  • 4 cloves Garlic
  • 1/2 tsp Black peppercorns
  • 1 Bay leaf
  • 1 tbsp Cooking oil

Instructions

  1. 1Prepare the 1 lb of string beans by trimming off the ends and cutting them into 2-inch pieces.
  2. 2Peel and finely mince the 4 cloves of garlic.
  3. 3Heat the 1 tbsp of cooking oil in a large skillet or wok over medium-high heat, about 375°F (190°C). Add the minced garlic and sauté for about 30-60 seconds until it is fragrant but not browned.
  4. 4Add the prepared 1 lb of string beans to the skillet and stir-fry for 5 minutes until they begin to turn bright green and slightly tender.
  5. 5Pour in the 1/4 cup of soy sauce and the 1/4 cup of vinegar. Add the 1/2 tsp of black peppercorns and the 1 bay leaf to the skillet.
  6. 6Bring the liquid to a simmer, then reduce the heat to medium-low, about 300°F (150°C). Cover the skillet and cook for 10-15 minutes, or until the string beans are tender to your liking. Stir occasionally to ensure even cooking.
  7. 7Remove and discard the bay leaf before serving. Serve the Adobong Sitaw hot.
