Dundun (Fried Yam)

Ingredients

  • 1 medium Yam
  • 2 cups Vegetable Oil
  • 1/2 tsp Salt
  • 1/4 tsp Cayenne Pepper (Optional)

Instructions

  1. 1Prepare the yam by peeling it and cutting it into thick slices, about 1/2 inch thick.
  2. 2Pour the 2 cups of vegetable oil into a large, heavy-bottomed pot or deep frying pan. Heat the oil over medium-high heat until it reaches 350°F (175°C).
  3. 3Carefully add the yam slices to the hot oil, frying them in batches to avoid overcrowding the pot. Fry for about 8-10 minutes per batch, or until the yam is golden brown and cooked through. You should hear a gentle sizzle as they cook.
  4. 4Using a slotted spoon or spider strainer, remove the fried yam slices from the oil. Place them on a plate lined with paper towels to absorb any excess oil.
  5. 5Immediately season the hot fried yam with the 1/2 teaspoon of salt and the 1/4 teaspoon of cayenne pepper (if using). Toss gently to coat evenly.
  6. 6Serve the Dundun (Fried Yam) hot as a satisfying snack.
